Cooking Favorites of Marlinton

Apple Cake
Mrs. Irene Smith
2 cups diced raw apples
Add 1 ½ cups sugar and let stand for 15 minutes.
Add:
1 ½ cup flour
2 Tbsp. melted shortening
2 eggs
¾ tsp. salt
¾ cup nuts
1 ½ tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
Liquid for this cake is formed by letting the sugar stand on the apples for 15 minutes.
Mix well and bake in a small baking dish at 350º for 35 to 40 minutes.
Serve with whipped cream.

Pumpkin Bread
Maude Welder
3 ½ cups flour
1 ½ tsp. salt
1 tsp. nutmeg
1 cup chopped nuts
1 1/2 cups pumpkin
2/3 cup water
2 tsp. baking powder
1 tsp. cinnamon
3 cups sugar
4 eggs, beaten
1 cup Wesson oil
Sift together all dry ingredients.
Combine nuts, eggs, pumpkin, oil and water.
Add to dry ingredients, mix well.
Pour into 3 greased and floured loaf pans.
Bake at 350º for an hour or until done.
Cool slightly in pans, then turn onto racks to finish cooling.
Wrap in foil and store in refrigerator or freezer.
