What’s Cookin’?

I had a dear friend who I really miss, and that was Frank Gravely.
Frank went to yard sales, and if he saw something he thought I needed, he brought it to me. Maybe it would be a religious picture, a religious plaque or book, a pot or pan or a cookbook. He brought me an A & P cookbook and a Julie Eisenhower cookbook one day, which I will always cherish. I loved to cook and give Frank his supper. He enjoyed it all – no matter what.

A&P’s Great American Meatloaf
2 lbs. mixed ground meat – pork, ground beef or veal, if you want.
1 slice stale bread, crumbled
1/2 cup milk
2 eggs
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 cup onion, chopped
2 Tbsp chopped parsley
1/2 cup catsup
In a large bowl:
Soak bread in milk.
Beat eggs and add to milk.
Add remaining ingredients except catsup.
Shape into a loaf and place in a buttered baking pan.
Pour catsup over loaf.
Bake 325º for 1 1/2 hours.
Baste occasionally with pan sauce.
Variations:
1/4 cup green pepper
2 Tbsp. olives
Omit milk, add extra catsup to meat mixture.

Crock Pot Steak
3 or 4 lbs. round steak
2 cans cream of chicken or cream of mushroom soup
1 pkg. onion soup mix
Cut steak in small pieces and put into crock pot.
Add soup and sprinkle dry soup mix over top and stir.
Cover, and cook on high for five hours or until tender.
