What’s Cookin’?

Chicken Noodle Gumbo
“Good for hungry children when they come home from school.”
2 lb. boneless chicken, cut into 1 inch cubes
4 16 oz. cans chicken broth
15 oz. diced tomatoes
32 oz. frozen mixed vegetables
8 oz. bow tie pasta, uncooked
Salt and pepper to taste.
Place chicken broth and tomatoes in large pot.
Bring to boil over medium heat.
Simmer 10 minutes.
Add vegetables, pasta and seasonings.
Return to a boil.
Cover and simmer one hour.
Serves 10

Cabbage Roll Casserole
2 lb. ground beef, browned
1 cup onion, chopped
29 oz. canned tomatoes
1 medium head of cabbage
1 cup instant rice, uncooked
1 tsp. salt
14 oz. can beef broth
Combine all ingredients – except broth – in an ungreased 9 x 13 inch baking dish.
Drizzle with broth.
Cover with foil.
Bake 350º for 1 hour
Stir.
Bake an additional 30 minutes or until the rice is cooked, and the casserole is heated through.
10 to12 servings
