Pineapple Bake
1 large can pineapple
2 eggs, beaten
1 Tbsp. Hudson Cream flour
1/2 cup sugar
1 cup coconut
Mix eggs, flour and sugar.
Add to pineapple.
Pour into a greased casserole dish.
Sprinkle with cinnamon and coconut.
Bake, uncovered 1/2 hour or until firm.

Five Egg Cake
1 3/4 cups sugar
3/4 cup shortening
5 eggs
2 cups Hudson Cream flour
1/2 tsp. salt
2 tsp. vanilla
Cream shortening and sugar.
Beat in eggs, one at a time.
Beat as long as you like – 10 minutes, if you like a lighter cake.
Stir in flour and salt.
Add vanilla.
Bake in a well-greased and floured tube pan for one hour at 350º.
