Sloppy Joes

1 1/2 -2 pounds ground venison
2 strips bacon, diced
1 large onion, diced
2 cloves garlic, minced
1 bottle chili sauce
1 Tbsp. red wine vinegar
1 Tbsp. brown sugar
1 tsp. salt
1/2 tsp. pepper
Dash hot sauce, optional 
1/4 cup stuffed green olives, sliced. Optional. 
Brown bacon in a 12-inch seasoned skillet. Remove bacon bits and set aside. Keep bacon drippings in pan and add venison and onions.  Cook until venison is browned. Add garlic, chili sauce, wine vinegar, brown sugar, salt, pepper, olives and hot sauce. Simmer 30 to 45 minutes. Add bacon bits, check for seasoning and serve on buns. Freezes well.

Oatmeal Banana Cookies

1 1/2 cups flour
1/4 tsp. nutmeg
1/2 tsp. soda
1 tsp. salt
3/4 tsp. cinnamon 
1 cup sugar
1/4 cup butter (1/2 stick), room temperature 
1 egg, beaten 
1 cup mashed banana 
1/2 cup nuts
1 3/4 cup rolled oats
Sift together flour, spices, baking soda and salt. Set aside. Cream butter and add sugar.  Add egg and mix well. Blend in banana.  Add oats and nuts. Add flour mixture and mix well.  Drop by tablespoons on greased cookie sheet.  Bake at 375 degrees for 12- 14 minutes.  Makes 3 dozen cookies.
