Scotch Soda Scones
1 lb. butter
1 tsp. cream of tarter
1/2 tsp. baking soda
1/2 tsp. salt
1 oz. shortening
2 tsp. syrup
Rub shortening into flour, add all dry ingredients rubbed through sieve.
Add syrup and enough buttermilk to make a dough just stiff enough to roll out. Use knife for mixing.
Shape into round cakes, just a little smaller than griddle.
Divide each cake into 4 pieces and cook each side well on a well floured, heated griddle.
Wash, quarter and dice 2 medium-sized apples (about 2 cups).
Combine with 1 cup chopped celery and ? cup chopped walnuts.
Lightly toss with 1/4 tsp. sea salt and 1/4 cup mayonnaise.
Chill in refrigerator until ready to serve.
Serve in crisp lettuce cups.
Sprinkle with paprika.
About 4 servings.
