Barbecue Rub for Meat or Poultry

1 cup sugar

¼ cup seasoned salt

¼ cup paprika

¼ cup barbecue spice

¼ cup garlic salt

2 Tbsp. onion salt

2 Tbsp. celery salt

2 Tbsp. chili seasoning – not chili powder

2 Tbsp. black pepper

2 Tbsp. lemon pepper

1 Tbsp. ground ginger

Mix all ingredients together and store in an airtight container.

Sprinkle lightly on meat or poultry before grilling.

 

Fluffy Chicken or Turkey Dressing

½ cup diced onion

½ cup diced celery

1 cup chicken or turkey broth

4 eggs, lightly beaten

2 cups milk

Salt to taste

1 loaf stale bread or more.

Tear the bread into pieces.

Add onion and celery and mix lightly.

Add eggs, milk and salt.

Add broth.

Pour into a casserole dish.

The mixture will appear very soupy but will bake to a nice light fluffy dressing.

Bake 375º or 400 º for 30 minutes. (Depending on your oven.)

 

Holiday Glazed Ham

1 boneless cooked ham – about 5 pounds

½ cup butter

2 Tbsp. all-purpose flour

1 cup apple jelly

2/3 cup packed brown sugar

½ cup orange juice

¼ cup sugar

½ tsp. each of ground cinnamon, nutmeg and cloves

Place ham on a rack in a large roasting pan.

Bake uncovered at 325º for 1 ¼ hours.

For glaze –

Melt butter in a saucepan.

Stir in flour until smooth.

Stir in jelly, brown sugar, orange juice, sugar, cinnamon, nutmeg and cloves.

Cook and stir over medium heat until smooth.

Brush some of the glaze over the ham and bake 30 to 35 minutes longer or until a meat thermometer reads 140º.

Let stand 5 to 10 minutes before slicing.

Simmer remaining glaze and serve with ham.

 

Christmas Cakes

2 sticks margarine

½ cup molasses

2 cups sugar

2 eggs

4 ½ cups flour

4 tsp. baking soda

2 tsp. cinnamon

1 tsp. ginger

1 tsp. cloves

Mix together first four ingredients.

Sift dry ingredients and add to first mixture.

Beat well.

Refrigerate for 2 hours or more.

Make into walnut size balls and roll in sugar.

Bake 8 to 10 minutes at 350º.
