What’s Cookin’?

Fish Cakes
Cook 1 lb. any type fish in salted water about 30 minutes, until tender. Drain and chop.
Add:
2 cups bread crumbs
1 beaten egg
2 Tbsp. each – diced onion and green pepper.
Form into cakes. Fry in melted butter until golden brown.
Serve with tarter sauce.

Bubble and Squeak 
1/2 head cabbage
2 large slices cured ham
Bacon drippings
Salt and a big dash of pepper
Cover in water and parboil the cabbage for 5 minutes. Drain, cut in wide ribbon-like slices.
Cut ham in 1-inch squares.
Grease bottom of deep skillet with bacon drippings, put in cabbage and ham, stir together.
Cover and cook on medium heat 15 to 20 minutes. Season to taste.
Careful with the salt (the ham may be salty enough) but use a heavier hand with the pepper. Serves 4-6.
