Green Tomato
Sweet Relish
7 lbs. green tomatoes, chopped
4 cups red and green peppers, chopped
2 cups celery, chopped
2 cups onion, chopped
2 cups grated carrots
4 cups vinegar
6 cups sugar
1 Tbsp. mustard seed
1 Tbsp. celery seed
Put finely chopped and grated vegetables in a large bowl and sprinkle with 4 Tbsp. salt.
Let stand overnight.
Drain.
Bring last four ingredients to a boil, add vegetables and simmer 20 minutes.
Fill clean jars and seal.
Process in water bath 10 minutes.
Makes about 9 pints.
This is an excellent relish.

Bread and Butter Pickles
4 quarts sliced cucumbers
1 quart sliced onions
3 cloves garlic
1 red pepper
1 green pepper
1/3 cup salt
5 cups sugar
3 cups white vinegar
1 1/2 tsp. celery seed
1 1/2 tsp. turmeric
2 tsp. mustard seed
Sprinkle salt over the first five ingredients and cover with crushed ice.
Cover and let stand three hours and then drain.
Pour the last ingredients over cucumber mixture and boil or simmer for five minutes.
Pour into clean pint jars and seal.
Process in water bath 10 minutes.
Makes about 6 quarts.
