Thelma’s Peach Preserves
Frances Dilley
5 cups crushed peaches
2 cups crushed pineapple
7 cups sugar
3 pkgs. apricot Jell-O
Mix together peaches, pineapple and sugar.
Bring to a hard boil, stirring often.
Cook for 15 minutes.
Remove from heat.
Skim off foam.
Add apricot Jell-O and stir well to dissolve.
Let cool and fill jars.
Keep in freezer.

Southern Spoon Bread
Opal Moore
3/4 cup yellow corn meal
1 tsp. salt
3 Tbsp. butter
1 cup boiling water
1 cup milk
2 eggs, beaten
2 tsp. baking powder
1/4 cup sugar
Combine corn meal, salt and butter.
Stir in boiling water and beat until smooth.
Add milk, egg and baking powder.
Mix well.
Turn into a greased loaf dish and bake at 350º for 50 minutes or until firm.
