Grilled Atlantic Salmon Steaks in Basil Butter
Lucy West
1/4 cup butter, softened
1 tsp. lemon juice
1 tsp. basil leaves
1/2 tsp. parsley flakes
Black pepper to taste
4 fresh Atlantic salmon steaks (5-6 oz. each)
In a small bowl, combine butter, lemon juice, basil and parsley; mix until blended.
Spread top of salmon steaks with half of the butter mixture and sprinkle with pepper.
Grill or broil salmon turning halfway through cooking.
Spread with remaining butter mixture, sprinkle with pepper and finish broiling.
Makes 4 servings.

Pudding Cheesecake
in 15 Minutes
Ina Montgomery
8 oz. pkg. cream cheese
2 cups milk
1 pkg. Jell-O instant pudding
1 baked graham cracker crust, 9-inch
Stir cream cheese until smooth.
Gradually blend in 1/2 cup milk until mixture is very smooth.
Add remaining milk and the pudding mix.
Beat slowly with egg beater or electric mixer for 1 minute.
Pour at once into the cool baked crust.
Sprinkle graham cracker crumbs on top to make it extra crunchy.
Chill until set.
Serves 6 to 8
