The Art of Cooking in Marlinton

Mrs. A. N. Ricottilli
2 cups sliced onion
3/4 cup chopped green peppers
3 Tbsp. fat
1 lb. ground beef
2 ½ cups tomato juice
1/2 cup uncooked rice
1 tsp. salt
1/2 tsp. chili powder
1/8 tsp. black pepper
Cook onions and green peppers slowly in fat until onions are soft and yellow.
Add meat, brown.
Add remaining ingredients.
Pour into a greased casserole dish.
Bake at 350º for 1 hour.
Yields 6 servings.

Six Layer Dinner
Mrs. Richard Skaggs
Place thick layer of sliced raw potatoes in baking dish, which has been buttered.
Wash 1/3 cup rice and sprinkle over potatoes.
Cover rice with 1 ½ lbs. ground beef.
Add a layer of sliced onions and a layer of green peppers.
Pour 1 quart of canned tomatoes with 1 tsp. salt and 1 tsp. pepper over top.
Place in 325º oven for 2 ½ hours.
Macaroni may be substituted for rice, and carrots for green pepper.
