A Taste of Heaven

Hush Puppies
Jenny Duncan
1 cup yellow corn meal
1 cup flour
1Tbsp. baking powder
1/12 tsp. salt
1/8 tsp. pepper
pinch cayenne pepper
1 egg
1 cup water (about)
1 medium onion, chopped fine
½ cup vegetable oil
Mix corn meal, flour, baking powder, salt, pepper and cayenne pepper together.
In a small bowl, beat egg and ½ of the water.
Stir into the mix and add just enough water to thicken the batter.
Drop by heaping tablespoonful into hot oil and cook three minutes per side.
Drain on paper towel.
Makes 24 hush puppies.

Coating Mix
for Chicken or
Pork Chops

2 ½ cups dry bread crumbs – whole wheat is best
2 Tbsp. dry onion soup mix
½ tsp. salt
½ tsp. pepper
½ tsp. garlic powder
½ tsp. onion powder
1 Tbsp. dried parsley
1 Tbsp. dried oregano
Combine ingredients together, coat meat with mixture.
Place in 11 x 7 x 2 inch pan.
Drizzle melted butter or margarine over the meat.
Bake uncovered at 350º for one hour or until done.
Serves 4.
