What’s Cookin’?

Butterscotch Squares

1 stick of butter
1 cup brown sugar
1 cup white sugar
4 eggs, well beaten
1 cup flour
1 tsp. baking powder
1 tsp. vanilla
1 cup pecans
Powdered sugar
Preheat oven to 350 degrees.
Cream butter and sugars
Add eggs
Mix baking powder into flour, and add to the butter-sugar-egg mixture.
Add vanilla and nuts.
Beat on slow speed.
Pour into a greased  9 x 9 pan.
Can use a 9 x 13 pan for thinner bars.
Bake 30 minutes.
Cool and dust with powdered sugar.
 
Pineapple Upside Down Cake

Cake
1 stick butter
1 cup sugar
2 eggs
¼ tsp. salt
2 ¼ tsp. baking powder
2 ¼ cups flour
¾ cup milk
Cream butter and sugar
Add eggs, one at a time, mixing well.
Combine dry ingredients in another bowl.
Add dry ingredients to mix alternating with milk.
The Good Part
1 stick butter
1 cup brown sugar
1 large can crushed pine-apple or tidbits
Melt butter in a 9 x 13 pan.
Sprinkle sugar on top.
Add pineapple.
Pour in cake batter, carefully spreading.
Bake at 375 degrees for 45 minutes.
Turn cake out onto serving platter while still hot.
