Healthier Quiche
1 deep dish pie crust
1 cup grated cheddar cheese or mixture of cheeses
2 Tbsp. grated parmesan cheese
1/3 cup crumbled cooked bacon or diced ham
1/3 medium onion, diced
1 cup sliced zucchini or spinach, broccoli, asparagus, kale
3 lg. eggs
1/2 cup heavy cream
1/2 cup cottage cheese
1/4 tsp. cayenne
1/4 tsp. black pepper
1/2 tsp. salt
Sauté onion in 1 Tbsp. butter.
Cut up zucchini or other veggie. Sauté, if desired.
Blend eggs, heavy cream, cottage cheese and seasonings together.
Assemble:
Place pie shell on a parchment covered baking sheet.
Put in 1 cup grated cheese, and sprinkle parmesan over it.
Sprinkle crumbled bacon or ham over the cheese.
Spread the sliced vegetables over top.
Add egg mixture, using a fork to gently direct the egg mixture to seep to the bottom of the pie.
Do not prick the pie shell.
Continue to add mixture until pie shell is full.
Bake at 400º for 15 minutes. Lower the temperature to 300º and continue to bake for 40 to 45 minutes or until done.
Convection oven: Bake at 400º for 8 minutes, then 20 to 30 minutes at 300 º.
