Ice Cream and Strawberries
1 qt. strawberries. Wash, hull and mash through sieve.
Add juice of 1/2 lemon and sugar to sweeten.
Freeze in refrigerator tray.
Top with sweetened whipped cream or vanilla ice cream.
Keep in freezer until ready to serve.
Cut into squares and turn out.
Serves 8.
Easy Watermelon Salad
6 cups cubed seedless watermelon
2 Tbsp. minced fresh mint
1 Tbsp. lemon juice
1 Tbsp. olive oil
2 tsp. sugar
Place watermelon and mint in a large bowl. In a small bowl, whisk lemon juice, oil and sugar until sugar is dissolved. Drizzle over salad; toss gently to combine.
