Ginger Ale Salad
Dissolve one package of lime Jell-O in 1/2 cup boiling water, stirring constantly.
Cool.
Add 1 1/2 cups ginger ale.
Let the mixture thicken a little, then add 1 cup of chopped nuts and celery, one cup chopped orange segments, white grapes and pineapple chunks.
Fill individual molds, after dipping them in cold water.
Put in ice box to congeal.
Turn out and serve on lettuce with mayonnaise garnish.
West Virginia Jambalaya
1 cup chopped ham
Onion
1 1/2 cups hot water or stock
Sweet pepper
1 pint tomatoes
1 cup rice
1 chicken cooked and shredded
Melt one Tbsp. of lard in a pot and brown a cut up onion. Add a spoon of flour to brown and then add tomatoes (which have already been chopped and heated). Add ham and chicken, season with salt, pepper, sweet pepper and paprika.
Put 1 1/2 cups of hot water or stock in this and cook for 10 minutes.
Add one cup rice and cook until done.
