Lima Bean and Bacon Salad
2 cups cooked lima beans
1 cup celery, chopped
3 strips bacon, cooked
1 small onion, minced
2 hard-cooked eggs, chopped
Mayonnaise or salad dressing
Mix all ingredients well.
Chill and serve on lettuce leaves.
Serves 6.
Frozen Lemon Mousse
6 eggs, separated
1 1/4 cups sugar
1/2 cup lemon juice
1/2 pint cream, whipped
vanilla wafers, crumbled
Beat egg whites until stiff, gradually adding sugar.
Add egg yolks, one at a time, beating well after each.
Pour in lemon juice, beating well.
Fold in whipped cream.
Sprinkle wafer crumbs in bottom of a pie plate or parchment paper-lined muffin tin, reserving some of the crumbs to sprinkle on top, if desired.
Freeze.
Once removed from the freezer, serve immediately.
Serves 6.
