With the arrival of fall comes the arrival of fall hunting seasons.\u00a0 With that also come thoughts of processing your own wild game.\u00a0 If you\u2019ve ever wanted to do so but haven\u2019t had the opportunity to learn how, now is the time.\u00a0 \r\n\r\nThe WVU Extension Service hopes you will enroll in the upcoming Venison 101 class which will be offered Thursday, October 21. The location for the class will be determined later. \r\n\r\nWhether you are a beginner or a seasoned hunter, there is something to be learned by everyone. The class will cover each step of the process \u2013 from the time that buck hits the ground, to you enjoying it on your dinner plate.\u00a0 Come prepared to get your hands dirty as we will have harvested venison that will be worked up into the proper cuts and uses. \r\n\r\nWe will also cover preservation techniques, including canning and drying. \r\n\r\nAs a treat, we will enjoy some of the \u201cspoils of our labor\u201d with venison cooking and taste testing. \r\n\r\nThe WV DNR will also be there to go over deer management strategy for the Mountain State and answer any questions you may have.\r\n \r\nIf you\u2019d like to attend, please RSVP by calling the WVU Extension Office at 304-799-4852 by Thursday, October 14.\u00a0 Space will be limited due to COVID-19 guidelines.
