What’s Cookin’?

French Dressing
1 can tomato soup
1 1/2 cups vegetable or olive oil
1 cup sugar
3/4 cup vinegar
1 tsp. paprika
1 tsp. black pepper
1 tsp.salt
1 tsp. garlic salt
1 tsp. dry mustard
Mix all ingredients together. Serve on tossed salad.

Potato Salad
6 good sized potatoes, diced
1 tsp. salt
2 sweet pickles, cut up
2 ribs of celery, cut fine
5 boiled eggs, cut up
1 small onion, chopped fine.
Put potatoes and 1 tsp. of salt in a sauce pan and cover with water. Bring to a boil and cook until tender, but not mushy – about 10 minutes.
Remove from heat, drain and let cool.
Put potatoes in a bowl.
Add pickles, celery, eggs and onion.

Dressing
1 cup miracle whip
1 1/2 tsp. mustard
1/2 Tbsp. sugar
1/2 tsp. salt
1/4 tsp. black pepper
Mix together dressing ingredients, adjusting to taste as you like.
Stir into potatoes.

Also, Mom made her own dressing for potato salad, which I think is so good.

Mom’s Boiled Salad Dressing
1 egg
2 tsp. sugar
1 tsp salt
2 tsp. flour
3/4 cup water
1/4 cup vinegar
1 tsp. mustard
2 Tbsp. melted butter
2 Tbsp. mayonaise
Combine dry ingredients.
Beat egg and mix in butter, vinegar and water.
Cook over hot water (double boiler), stirring constantly until thick and smooth.
Cool, then add mayonaise.
