What’s Cookin’?

Crunchy Apple
Pie Special
1 8- or 9-inch pie shell
3/4 cup sugar
1 Tbsp. Hudson Cream flour
1 tsp. cinnamon
1/4 tsp. nutmeg
5 cups thinly sliced apples
1/2 cup coconut flakes
1/3 cup cornflake crumbs
2 Tbsp. melted butter
2 Tbsp. brown sugar
For filling: Mix together apples, cinnamon, flour, nutmeg, and white sugar. Pour into pie crust.
For topping: Combine brown sugar, butter, coconut flakes, and cornflake crumbs together in a small bowl. Sprinkle over the apple filling. Bake at 350º for 40-45 minutes or until done.

Oatmeal Pie
2 eggs
1 cup white sugar
1 cup dark Karo syrup
1/2 cup quick oatmeal
6 Tbsp. melted butter
6 Tbsp. milk
1 tsp. vanilla
1/2 cup coconut
2 8-inch pie crusts
Bake pie crusts according to directions.
Beat eggs until well-beaten. Add butter, coconut, Karo syrup, milk, quick oatmeal, white sugar, and vanilla. Mix until blended. Pour into pie crusts.
Bake at 350º until a knife comes out clean when inserted into the middle.

Lima Beans with Cheese
3 10 oz. packages of quick lima beans, frozen
3/4 cup parsley, snipped
1 1/2 cups Swiss (or Gruyere) cheese, grated
3/4 cup milk
Cook beans in boiling water (salted) as directed on package. Drain.
Add cheese, parsley, and milk. Mix gently until cheese is melted. Serve at once.
