What’s Cookin’?

Good Fish Batter
Just like Long John Silver’s
1/2 cup water
1/2 cup milk
1/2 tsp. salt
1 cup Hudson Cream flour
1 Tbsp. baking powder
1 tsp. vinegar
Beat all ingredients together.
Dip fish in batter.
Fry in deep fat fryer until golden brown.
Turning once.

Barbecued Chicken
1 chicken, cut up
Butter
Hudson Cream flour
1 bottle hot catsup
1 bottle or can of Pepsi
Salt and pepper
Dredge chicken in flour.
Fry in butter until brown on both sides.
Mix catsup and Pepsi together.
Pour over chicken.
Let simmer for 1 hour.

Pecan Crunch Pie
3 eggs
1/2 tsp. baking powder
1 cup sugar
1 cup Graham Cracker Crumbs
1 cup chopped pecans
1 tsp. vanilla
Beat eggs and baking powder together.
Add sugar, very slowly.
Beat until smooth and stiff.
Fold in Graham Crackers and pecans.
Add vanilla.
Spread in heavily buttered 10-inch pie pan.
Bake at 350º for 30 minutes.
Chill for 4 or more hours.
Serve with whipped topping.
