Elegant Carrots
2 pounds carrots, pared; cut crosswise into thin slices
1/2 cup butter
1 Tbsp. sugar
1 tsp. celery seeds
1/2 tsp. salt
1/2 cup orange juice
Heat all ingredients except orange juice in a 2-quart saucepan over medium heat until butter melts; reduce heat. Simmer, covered, stirring occasionally, 10 minutes. Stir in orange juice; simmer covered, until carrots are tender, about five minutes. 
Microwave directions: place carrots, 1/3 cup of butter and the sugar in a 2-quart glass baking dish; microwave covered on full power, stirring after five minutes. Add 1/2 tsp. celery seeds, the salt and orange juice. Let stand covered three minutes. Serves eight. 

Creamy Shrimp Mold
One cup cream of mushroom soup, undiluted
6 oz. cream cheese, room temperature 
1 envelope, plain gelatin, softened in 3 Tbsp. water
One medium onion, finally minced
3 pounds shrimp, cooked, peeled and coarsely chopped
1 cup, finally chopped celery 
1 cup mayonnaise 
1 Tbsp. lemon juice
Tabasco to taste, optional 
Heat soup, mixing softened cream cheese until melted. Remove from heat. Stir in soften gelatin until dissolved. Add remaining ingredients and blend thoroughly. Turn into greased mold and chill until firm. Serve six for lunch. Can be an appetizer and served with crackers.
