Marinated Mushrooms
Appetizer/Hors d’oeuvre
2 cups button mushrooms
Water
Salt
2 Tbsp. Lemon juice
1 cup white vinegar
1/2 cup olive oil
2 cloves garlic, crushed
Pinch thyme
Few coriander seeds
Few fennel leaves
1 bay leaf
Cover mushrooms with water.
Add salt and lemon juice.
Bring to a boil for 2 to 3 minutes
Drain mushrooms.
Combine rest of ingredients for marinade.
Boil 8 to 10 minutes.
Let stand in jar for at least 12 hours.
These will last in the refrigerator for a month.
Diabetic Beef Stew
1 pound beef, cubed
1 beef bouillon cube
2 Tbsp. Worcestershire sauce
2 cups boiling water
1/2 tsp. salt
1 cup canned tomatoes
1/4 tsp. dried oregano
4 medium potatoes, cubed
1/8 tsp. ground allspice
3 medium carrots, sliced
3 small onions, quartered
1 pkg. frozen peas
Marinate beef in Worcestershire sauce for 4 hours.
Cook beef until brown
Add salt, oregano, allspice.
Dissolve bouillon in boiling water.
Add to beef mixture.
Add tomatoes.
Cook over low heat 2 hours
Add potatoes, carrots, onions and cook 30 minutes
Add peas, and cook additional 15 minutes or until tender
