Crescent Roll King Cake
1 can crescent rolls
4 oz. cream cheese, softened 
1/2 cup powdered sugar
1/2 tsp. vanilla extract
1/2 cup pecans or walnuts, chopped
1/4 cup brown sugar
1/2 cup powdered sugar
1/4 tsp. almond extract, optional
1 1/2 -2 Tbsp. water or milk
Heat oven to 350 degrees. Put parchment paper on baking sheet.  Open can of crescent rolls and place on parchment paper to form a rectangle. Place softened cream cheese, powdered sugar and vanilla extract in small bowl and use hand mixer to blend well.  Spread cream cheese mixture down center of crescent rolls.  Mix nuts with brown sugar and spread over cream cheese mixture.  Using a sharp knife, slice from edge of cream cheese to outer edge -about 6 slices on each side.  Place cut pieces over cream cheese and nut filling. Form log into a circle.  Bake at 350 for 15 minutes.  
Let cool slightly then mix 1/2 cup powdered sugar with almond extract and water or milk.  Mix well.  Pour over center of roll.  Top with purple, green and gold sugar or sprinkles.  Place a plastic baby or bean in the bottom of the cake.  Whoever gets the baby or bean in their piece is King or Queen for the day and must make the next King Cake to share. 

Easy Meatloaf
1 pound ground beef
3 eggs, beaten 
2 – 4 1/2 oz. cans diced green chilies
1 cup seasoned breadcrumbs
1/3 cup ketchup
1 Tbsp. chili powder
1 tsp. dried oregano
2 Tbsp. Worcestershire sauce
1/2 cup diced onion 
2 garlic cloves, minced 
Heat oven to 350 degrees.  In medium mixing bowl, combine all ingredients and mix well.  Place mixture in a lightly greased loaf pan.  Bake 40-50 minutes or until internal temperature reaches 165 degrees.  May top with ketchup during last 10 minutes of baking.   Serves 5.
