What’s Cookin’?

Festive Cheese Ball
12 oz. cream cheese, room temperature 
1 1/4 cups crumbled blue cheese
2 cups grated cheddar cheese
1/2 cup grated onion 
1 Tbsp. Worcestershire Sauce
2 tsp. soy sauce
2 cloves garlic, finely minced
1/4-1/2 tsp. red pepper flakes, or more to taste 
1 Tbsp. chopped parsley 
Chopped pecans or walnuts 
Blend together all ingredients except nuts.  Form into a ball then roll in chopped nuts.  Chill.  Serve with crackers or raw vegetables.   

Artichoke Squares
2 – 6 ounce jars marinated artichoke hearts 
1 clove garlic, finely minced
1/2 cup onion finely chopped
2 cups grated sharp cheddar cheese
4 large eggs
1/2 cup Italian breadcrumbs
1/2 tsp. dried oregano
1/2 jar diced pimento, optional  
1/8-1/4 tsp. salt
1/8-1/4 tsp. pepper
Preheat oven to 325 degrees.  Grease a 9×13-inch baking dish, set aside   
Drain liquids from one jar of artichokes into skillet.  Sauté onion and garlic until soft.  Drain liquid from other jar and discard. Chop artichokes. 
In mixing bowl, beat eggs then add breadcrumbs and oregano.  Stir in onion mixture, chopped artichokes, cheese, pimiento and a dash of salt and pepper.  Pour into greased baking dish.  Bake 30-35 minutes.   Cool, cut into squares and serve.
