What’s Cookin’?

Mozzarella Chicken Wings
I make this myself for a different way of cooking chicken wings.
Mix together and coat chicken wings with:
2/3 cup Bisquick
2 Tbsp. Parmesan cheese
2 tsp. Italian seasoning
1 tsp. paprika
1/4 tsp. pepper
Place wings in a 9 x 13 pan.
Bake uncovered 45 minutes at 400º
Turn chicken wings and add
2/3 cup tomato sauce
3/4 cup mozzarella cheese
Bake 5 minutes longer.
You can use any pieces of chicken, but if using breasts or thighs, put skin side down first.

Red Cabbage
and Sausage
I didn’t think I would like this, but it is real good.
2 Tbsp. bacon drippings
4 cups shredded red cabbage
2 cups cubed apples
1/4 cup brown sugar
1/4 cup vinegar
1/4 cup water
1 1/4 tsp. salt
Kielbasa Sausage – cut into cubes – the amount you prefer.
Heat drippings.
Add remaining ingredients.
Cover tightly and cook over medium heat for 25 or 30 minutes, until cabbage is done.

Ginger Snaps
I’ll admit making cookies is not my favorite thing to do, but this is a good one. I first made them in 1956.
3/4 cup shortening
1 cup sugar
1 egg
4 Tbsp. molasses
2 cups flour
2 tsp. baking soda
1 tsp. salt
1 tsp ginger
1 tsp. cinnamon
Sugar for coating
Pre-heat oven to 350º
Cream shortening and sugar together.
Add eggs and molasses.
Mix well and add dry ingredients.
Shape in a generous ball, about 1 Tbsp.
Roll in sugar.
Bake 8 to 10 minutes for chewy cookies or 10 -15 for crisp cookies.
