Gluten, Dairy and Egg Free Chocolate Cake
3 cups gluten-free flour
1 1/2 cups sugar
6 Tbsp. cocoa powder
2 tsp. baking powder
1 tsp. salt
2 cups non-dairy chocolate milk
1/2 cup vegetable oil
2 Tbsp. Apple Cider Vinegar
1 tsp. vanilla
2 tsp. xantham gum powder (opt)
Mix all dry ingredients together in medium mixing bowl. Add xantham gum if desired. Xantham gum is a thickening agent.
Make a hole in the mix and add in the liquid ingredients. Mix well. Pour into greased and floured pan.
Bake in 350º oven for 35 to 40 minutes or until done.
