What’s Cookin’?

Graham Cracker
Applesauce Pudding
Susie Rogers
2 1/2 cups graham cracker crumbs
2 cups applesauce
3/4 cup cream
2 eggs, well beaten
1 tsp. vanilla
Cinnamon and nutmeg, if desired.
3/4 cup melted butter
Combine applesauce, cream, eggs and vanilla. Mix well.
Mix crumbs and butter together.
Add 1 cup of crumbs to applesauce mixture.
Pour into a greased 8-inch square pan and top with remaining crumbs.
Bake at 350º for 30 minutes.
Serve with ice cream.

Rhubarb Cake
Ann Hannah
1 cup sugar
1/2 cup brown sugar
3/4 cup Wesson oil
1 egg, well beaten
3 tsp. vanilla
1/2 tsp. salt
1 tsp. soda
2 cups flour
1 cup buttermilk (or sweet)
1 1/2 cups finely chopped rhubarb
Mix sugars and Wesson oil. Add egg and vanilla.
Add salt, soda and flour, then buttermilk. Add rhubarb last.
Bake in a 13x9x2-inch pan at 350º for 35 minutes.
Freeze rhubarb in 1 1/2 cup packages in the summer for winter use.
