for Spring Greens
1/4 cup whole milk
1/4 cup apple cider vinegar
1 Tbsp. sugar
Fresh ground pepper to taste
1 cup mayonnaise (more or less)
Fresh herbs, optional
Whisk all ingredients together until smooth.
Taste and adjust vinegar, sugar and spices.
Cover and store in fridge. Keeps up to a week.
1 lb. ground round or sirloin
1 tsp. lemon juice
1 tsp. Worcestershire sauce
Dash hot sauce, optional
Fresh ground pepper
Mix lemon juice, Worcestershire sauce and hot sauce, set aside.
Make patties 1/2 hour before cooking. Sprinkle them with pepper. Let stay at room temperature.
Sprinkle cast iron or heavy skillet with enough onion salt to nearly cover the bottom. When salt is brown and skillet is hot, place patties in skillet. Let patties get crusty brown on one side before turning. After turning, place some of the sauce on each patty.
For extra flavor, add dash of butter to each patty.
Continue cooking for one minute.
