What’s Cookin’?

This is my Mom and Dad’s recipe. Dad came over from Italy when he was young. He was an excellent cook. I could tell you a long story about my happy childhood.

Everything in this recipe, except the sugar and salt, came from the garden Dad raised. We had our own animals, and Mom canned the meat. We also had milk cows.

 

Mom and Dad’s Spaghetti and Meatballs

1 pound ground chuck

1/2 pound ground pork

1 pound Italian sausage

1/4 cup flavored dry bread crumbs

1 clove garlic, minced

1/4 tsp. pepper

2 eggs, slightly beaten

1/2 cup milk

1 tsp. dried basil leaves

1/4 cup chopped parsley

1/4 cup chopped onions

In a large bowl, combine all ingredients and shape into 1 1/2 inch meatballs.

Preheat large skillet over medium heat.

Add just enough oil to cover the bottom of the pan.

Sauté meatballs until evenly browned.

Sauce – (double recipe)

1 cup chopped onion

1 clove garlic, crushed

2 quarts tomatoes

1 pint tomato paste

1/4 tsp. dried oregano

1 tsp. salt

1/8 tsp. hot peppers

1 tsp. dried basil

2 Tbsp. sugar

2 Tbsp. chopped parsley

1/2 cup water

Sauté onions and garlic in meatball grease over med-ium low heat until brown – about 4 or 5 minutes.

Pour into a large pot and add the rest of the ingredients.

Bring to a boil over medium heat.

Carefully add meatballs.

Simmer, covered, for 4 to 5 hours, stirring occasionally to prevent burning.

Serve over pasta.
