Oven Steak Fries

5 large potatoes, cut in thin wedges

3 Tbsp. olive oil

1 tsp. dried thyme

1 tsp. dried oregano

1 Tbsp. Steak Seasoning Blend or salt and pepper

Pre-heat oven to 425º.

Spread potatoes on cookie sheet.

Coat potatoes with olive oil, dried herbs and steak seasoning or salt and pepper.

Spread potatoes to the corners of the cookie sheet.

Bake for about 25 minutes, turning after 12 to 15 minutes.

Serve hot.

Corn Pone

4 cups corn meal

Scald corn meal with 1 pint of boiling water.

Add 1 pint of warm water.

Cover and let sit for one hour.

Add:

1 cup sugar

1 cup flour

2 eggs

1 cup buttermilk

1 tsp. soda, dissolved in buttermilk

Mix and bake in heavy tube pan at 350º for 1 1/2 hours.

When done, pour 1 cup boiling water over pone and let sit for 15 minutes before turning out.

 

Spoon Bread

Blend 1 cup corn meal with 2 cups boiling water.

Add 1 cup milk

1 tsp. salt

1 tsp. baking powder

2 Tbsp. sugar

4 eggs

4 Tbsp. butter

Mix well.

Pour into a well-buttered casserole dish.

Bake 1/2 hour at 400º.

Serve immediately.
