What’s Cookin’?

Pumpkin Pie
1 cup pumpkin
2/3 cup maple or brown sugar
1/2 tsp. ginger
1/2 tsp. cinnamon
3 eggs
2 cups milk
1/2 tsp salt
1 unbaked pie shell
Mix all ingredients together. Blend thoroughly. Pour into an unbaked pie shell and bake at 375º for 50 to 60 minutes or until a knife inserted in the center comes out clean. Halfway through baking time, cover edges of the pie crust with foil to prevent burning.

Easy Spiced Apples
1 cup water
6 apples
1 cup sugar
1/4 cup cinnamon drops
Boil water, sugar and cinnamon drops until cinnamon drops are dissolved.
Peel and core apples.
Slice into rings.
Add apples to the syrup and cook until tender.
Remove apples.
Boil syrup until thick.
Pour syrup over apples.
Serve warm.
