What’s Cookin’?

Ginger Beef
4 lb. beef roast
1 tsp. turmeric
2 tsp. ginger
2 tsp. salt
2 Tbsp. vegetable or olive oil
2 medium onions, chopped
2 cloves garlic, minced
1 cup canned tomatoes
1 cup broth or bouillon
Crushed red pepper flakes
Rub roast with turmeric, ginger and salt.
Brown in hot oil in heavy pot.
Place rack under roast and add remaining ingredients.
Simmer, covered, for three hours and 30 minutes.
Yield: 6 servings.

Viennese Coffee
1/2 cup heavy cream
1 Tbsp. confectioner’s sugar
1/2 tsp. vanilla
3 cups strong hot coffee
1/2 tsp. grated orange peel
4 sticks cinnamon
Combine cream, sugar and vanilla and beat with mixer until stiff peaks form.
Pour coffee into 4 cups.
Spoon whipped cream on top.
Garnish with orange peel.
Place 1 cinnamon stick in each cup.
Serve at once.
