What’s Cookin’?

Hot Peppers and Wieners

1 large (32 oz.) bottle catsup

1 pint vinegar

3 cups sugar

1 pint vegetable oil

1 tsp. salt

2 cloves garlic, chopped

2 gallons hot peppers

2 pounds wieners

Wash peppers and remove seeds.

Slice wieners.

In a large kettle combine catsup, vinegar, sugar, oil, salt and garlic.

Bring to a boil.

Add peppers and wieners.

Return to boiling and cook for 10 minutes.

Pack in hot jars.

Process in boiling water bath for 10 to 15 minutes.

 

Joyce Varner’s Hot Dog Chili

2 1/2 pounds ground chuck

1/2 cup chopped onion

1 cup tomato paste

1 1/2 tsp. salt

1 1/2 tsp. chili powder

1 1/2 garlic powder

1 tsp. parsley flakes

1 tsp. black pepper

3 cups water

Mix water with ground chuck and chopped onions. When meat has cooked, skim any fat off the top and discard.

Add tomato paste and spices, and simmer for one hour.
