Low Calorie Cabbage Vegetable Soup
½ medium head cabbage
1 or 2 onions
3 or 4 stalks celery
1 qt. chopped or stewed tomatoes
1 qt. tomato juice
1 cup cubed cooked lean beef (optional)
2 cups low fat beef broth
Cut up vegetables.
Put into a heavy kettle.
Add juice, tomatoes, broth and beef.
Salt to taste.
Simmer until vegetables are tender.
Other vegetables may be added.
Low Calorie Mock Mashed Potatoes
2 cups cauliflower florets, chopped
1 Tbsp. light sour cream, more to taste
1 Tbsp. butter
Salt and pepper to taste
½ cup shredded low fat cheese (optional)
Steam or microwave cauliflower until very soft. Put in a blender or food processor with butter and sour cream, blend until smooth.
Add salt and pepper.
Serve hot. Cheese can be added with sour cream or sprinkled on top, if desired.
