3 cups thinly shredded cabbage
2 medium carrots, thinly sliced
2/3 cup chopped celery
1 onion, chopped
1 Tbsp. sugar
1 tsp. salt
1/4 tsp. pepper
1 1/2 to 2 Tbsp. butter
Combine all vegetables in a casserole dish.
Sprinkle with sugar, salt and pepper and dot with butter.
Cover and bake at 325º for 30 minutes.
Stir once while baking.
Baked Potato Wedges
3 pounds small potatoes
¼ cup olive oil
1 ½ tsp. kosher salt
1 tsp. pepper
2 Tbsp. minced garlic
2 Tbsp. minced parsley
Cut the potatoes into quarters and place in a bowl with olive oil, salt, pepper and garlic, and toss until they are well-coated.
Place potatoes in a single layer on a sheet pan.
Bake at 400º for 45 minutes to 1 hour.
Turn at least once while baking.
Remove from oven and toss with parsley, and add extra seasoning, if desired.
