What’s Cookin’?

Chocolate Pound Cake

½ lb. butter
½ cup Crisco
3 cups sugar
5 eggs
1 cup milk
3 cups sifted bread flour
½ tsp. baking powder
¼ tsp. salt
4 Tbsp. cocoa
1 tsp vanilla
Cream butter, Crisco and sugar. Add eggs, one at a time to creamed mixture. Add the sifted dry ingredients alternately with the milk and vanilla.
Bake in a greased and floured tube pan at 300º for one hour.

Pork Chop Skillet

6 pork chops
6 Bermuda onions, sliced, not too thin
6 green peppers, remove top and seeds
6 Tbsp. uncooked rice
1 cup diced celery
3 cups cooked tomatoes or tomato juice
4 Tbsp. fat
Heat the fat in skillet.
Add the chops and brown on both sides.
On each chop, place a slice of onion and then a pepper ring.
Add 1 Tbsp. rice in each ring and then pour the tomatoes over all.
Sprinkle with the celery.
Cover and cook on low heat until the meat and rice are done – at least an hour or longer.
