Minnesota Harvest Bars

2/3 cup pumpkin
1 cup brown sugar
¼ cup melted shortening or oil
2 eggs
½ tsp. ginger
1 tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. cloves
1 tsp. vanilla
1 cup flour
½ tsp. soda
½ tsp. salt
½ cup dates or raisins
½ cup English walnuts
Mix pumpkin with brown sugar, shortening, egg, ginger, cinnamon, nutmeg, cloves and vanilla.
Stir in flour, soda, salt, dates and walnuts.
Bake in 9 x 13 inch greased and floured pan at 350º for 25 to 30 minutes.
Icing
3 Tbsp. butter
4 tsp. milk
½ cup brown sugar
1 cup powdered sugar
¾ tsp. Vanilla
Cook butter, milk and brown sugar until dissolved.
Cool and add powdered sugar and vanilla.
Spread on bars.

Applesauce Spice Cake

2 ½ cups flour
½ tsp. soda
1 tsp. salt
1 tsp. cinnamon
¾ tsp. nutmeg
½ ground cloves
¼ tsp. baking powder
½ cup margarine
2 cups sugar
2 eggs
16 oz. of applesauce
¾ cup raisins
½ cup chopped nuts
Combine first seven ingredients, set aside.
Beat margarine with mixer for 30 seconds.
Add sugars and beat until combined.
Add eggs, one at a time and beat one minute after each.
Add dry ingredients alternately with applesauce.
Beat well.
Stir in raisins and nuts.
Pour into a greased and floured 13 x 9 inch pan.
Bake at 350º for 45 minutes or until center is done.
