Beet Pickles
Opal Moore
Small, young beets
2 cups sugar
2 cups beet juice
2 cups vinegar
1 tsp. cloves
1 tsp. allspice
1 Tbsp. cinnamon
 Select small young beets, cook until tender.
Dip into cold water.
Peel off skins.
Mix remaining ingredients.
Pour over beets and boil for 10 minutes.
Pack into pint jars and seal.
Process in hot water bath for 10 minutes.
 
Ann’s Cherry Pie Salad
Ann Waugh Meeks
1 can cherry pie filling (light)
1 can crushed pineapple, drained
1 can Mandarin oranges, drained
1 cup miniature marshmallows
1 cup nuts, chopped
1 can Eagle brand milk (light)
1 large carton Cool Whip
Mix all ingredients together and pour into a 13 x 9 inch pan. Cool in refrigerator for two or three hours.
