What’s Cookin’?

Seasoned with Love Hillsboro Extension Homemakers

Texas Sheet Cake
Opal Moore
2 cups sugar
2 cups flour
2 sticks butter or margarine
4 Tbsp. cocoa
1 cup water
2 eggs
1/2 cup buttermilk
1 tsp. baking soda
1 tsp. vanilla
Sift together sugar and flour.
Bring to a boil the butter, cocoa and water.
Add boiled mixture to the eggs, buttermilk, baking soda and vanilla, then mix with sugar and flour.
Mix well.
Pour into a greased and floured 12 x 16 jelly roll pan.
Bake at 400 º for 20 minutes.
Frosting
1 stick margarine
4 Tbsp. cocoa
4 Tbsp. milk
1 lb. powdered sugar
1 tsp. vanilla
1 cup pecans
Bring margarine, cocoa and milk to a boil.
Add sugar, vanilla and pecans.
Frost cake while still warm.

Apple Torte
Opal Moore
1/2 stick margarine
1 cup sugar
1 egg
1 1/4 cup flour
1 tsp. soda
1/4 tsp. nutmeg
1/2 tsp. cinnamon
2 cups chopped raw apples
1/2 cup pecans
1/4 tsp. salt
Cream sugar and margarine, add egg.
Mix in remaining ingredients well.
Pour into well greased 6 x 10 inch pyrex dish.
Bake 40 minutes in 350º oven.
Serve with whipped cream.
Serves 6.
