Chocolate
Cinnamon Bows
Marietta Stemple
2 cups sifted flour
1 1/3 cups sugar
1/2 cup butter, softened
1 egg
6 oz. pkg. chocolate chips
1 tsp. baking powder
4 tsp. cinnamon
1/2 cup shortening
1 egg, separated
1/2 cup walnuts
Mix and sift flour, baking powder, 1 cup sugar and 3 tsp cinnamon.
Add butter, shortening, 1 egg and 1 egg yolk
Blend, turn into a 15x10x1/4 inch jelly roll pan.
Beat egg white slightly, and brush over the mixture
Combine remaining 1/3 cup sugar and 1 tsp. cinnamon, chocolate chips and walnuts.
Sprinkle over top.
Bake at 350º for 25 minutes.

Diabetic Cake
Louise Beard
2 cups water
2 cups seedless raisins
1 cup unsweetened applesauce
2 eggs
2 Tbsp. liquid sweetener
3/4 cup cooking oil
1 tsp. baking soda
2 cups flour
1 1/4 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
Cook raisins in water until water is gone.
Add applesauce, eggs, liquid sweetener and oil.
Mix well.
Mix together and blend in soda, flour, cinnamon, nutmeg and vanilla.
Bake in a floured loaf pan at 350º for 45 minutes or until done.
