With the arrival of fall comes the arrival of fall hunting seasons. With that also come thoughts of processing your own wild game. If you’ve ever wanted to do so but haven’t had the opportunity to learn how, now is the time.
The WVU Extension Service hopes you will enroll in the upcoming Venison 101 class which will be offered Thursday, October 21. The location for the class will be determined later.
Whether you are a beginner or a seasoned hunter, there is something to be learned by everyone. The class will cover each step of the process – from the time that buck hits the ground, to you enjoying it on your dinner plate. Come prepared to get your hands dirty as we will have harvested venison that will be worked up into the proper cuts and uses.
We will also cover preservation techniques, including canning and drying.
As a treat, we will enjoy some of the “spoils of our labor” with venison cooking and taste testing.
The WV DNR will also be there to go over deer management strategy for the Mountain State and answer any questions you may have.
