Wilted Lettuce
4 slices bacon
1/4 cup vinegar
Bowl of leaf lettuce, torn
1/2 cup chopped green onions
Salt and pepper to taste
Cut bacon into small pieces, fry and drain on absorbent paper.
Add vinegar to bacon fat and bring to a boil.
Cut lettuce into pieces convenient for eating, add onions, sprinkle with salt and pepper and pour hot vinegar mixture over it.
Toss the lettuce thoroughly so all will be well seasoned.
Sprinkle the top with crisp bacon and serve at once.
Yields 4 servings.
Green Onion Pie
Pastry for 9-inch pie
3 cups sliced green onions
3 Tbsp. butter or margarine
2 eggs
1/2 cup cream
1 tsp. salt
1/8 tsp. pepper
Line pastry in a 9-inch pie plate.
Sauté green onions in butter or margarine until tender.
Arrange on pastry.
Beat eggs slightly; add cream, salt and pepper.
Pour over onions.
Bake at 425º for 18 to 20 minutes, or until well browned and knife inserted in center comes out clean.
Yields 4-6 servings.
