What’s Cookin’?

Ballpark

Baked Beans

16 ounce can baked beans

1/4 cup brown sugar

2 Tbsp. catsup

2 tsp. mustard

1 small can crushed pineapple, drained

In a large bowl – combine beans, brown sugar, catsup and mustard.

Pour into a 2 quart baking dish.

Bake uncovered at 350º for 30 minutes.

Stir in pineapple

Bake 30 minutes longer.

 

Blue Ribbon

Pepper Relish

from Miss Alice Waugh

1 hot pepper

12 medium-sized red sweet peppers

12 medium-sized green peppers

6 medium-sized onions

1 quart boiling water

6 Tbsp. salt

3 cups sugar

1 1/2 Tbsp. mustard seed

1 quart vinegar

Grind peppers and onions

Pour boiling water over mixture.

Let stand until cool

Drain

Combine salt, sugar, mustard seed and vinegar

Pour over pepper mixture

Boil for 15 minutes

Ladle into hot jars and seal

Yield 6 pints

 

Hotdog Relish

12 green tomatoes

5 green peppers

3 red peppers

3 large onions

3 cups cider vinegar

9 ounce jar of mustard

5 cups sugar

1 cup flour

2 Tbsp. salt

2 Tbsp celery seed

2 Tbsp. turmeric

Finely chop vegetables in food chopper or processor.

Drain

Add remaining ingredients and cook until mixture thickens.

While hot, pour into hot canning jars.

Turn jars upside down until cool.
