What’s Cookin’?

One Dish Chicken and Gravy

Baking time 50 to 60 minutes

1 cut-up chicken or chicken pieces of your choice

4 Tbsp. butter or margarine

1 tsp. onion, chopped fine

1 cup light cream

1-10 ¾ oz. can cream of mushroom soup

2 cups mild cheddar cheese, grated

¼ to ½ tsp. each of salt and pepper, or to your taste preference

Pour melted butter in a 9 x 13 pan to cover bottom, add chicken.

Bake 425 degrees for 30 minutes

While chicken is baking, mix cream, soup, cheese and salt and pepper in a bowl.

Pour over chicken

Cover with foil

Bake at 325 degrees for 20 minutes

This is very good served with rice.

 

Cranberry Salad

2 pkg. cherry Jello

1 pkg. cranberries

2 apples, not peeled

1 large orange, peeled

1 medium can crushed pineapple

1 cup nuts, chopped

2 cups sugar

Mix Jello as directed but decrease by 1 cup water

Refrigerate

Grind cranberries, apples and orange in food processor

Add sugar, pineapple and nuts

When Jello starts to set, add all ingredients.

Refrigerate until fully set.

 

Ice Cream Salad

2 boxes lemon Jello

1 quart vanilla ice cream

1 No. 2 can crushed pineapple, drained, but reserve the juice

1 No. 2 can fruit cocktail, drained

2 or 3 large bananas, nice and ripe.

Dissolve Jello as directed.

Add pineapple juice reserved from the crushed pineapple

Add ice cream and let melt.

Add fruit cocktail

Chill until set.

Serves 15 to 20
