Chocolate Cheesecake
10 chocolate wafer cookies
4 oz. cream cheese
1/2 cup vanilla yogurt 
1/4 cup sugar
1 large egg 
1 Tbsp. cocoa powder
1/2 cup semisweet chocolate chips, melted and cooled 
2 Tbsp. shaved chocolate 
Preheat oven to 350 degrees. Put one chocolate cookie in paper cup lined muffin tin.  Crush 2 cookies for topping. 
Using food processor or hand mixer, mix together cream cheese, vanilla yogurt, sugar, egg, cocoa powder. Add cooled chocolate chips. Mix well. Put batter on top of cookie in each muffin tin. Top with crushed cookies. Bake 20 minutes. Remove from oven and let cool. Chill for one hour. Top with shaved chocolate. 

Sour Cream Coffee Cake
1 cup butter, room temperature 
1 1/2 cups sugar
2 eggs
1 cup sour cream
1 tsp. vanilla extract 
2 cups unbleached flour 
1/2 tsp. baking powder
1/4 tsp. salt
1/4 cup wheat germ or wheat bran, optional

Filling/Topping
1/2 cup chopped pecans
1 tsp. cinnamon
2 Tbsp. sugar
Preheat oven to 350 degrees. Grease an 8×8 pan or Bundt pan. 
Cream butter and sugar till light and fluffy. Add eggs, sour cream and vanilla and blend well. Combine dry ingredients. Slowly add dry ingredients to wet ingredients. Mix together. Pour 1/2 of batter into baking pan. Sprinkle 1/2 of nut mix over batter. Top with remaining batter. Sprinkle nut mix over top. Bake 50-55 minutes or until toothpick inserted into center comes out clean.
