Apple Torte
1/2 stick margarine
1 cup sugar
1 egg
1 1/4 cup flour
1 tsp. soda
1/4 tsp. nutmeg
1/2 tsp. cinnamon
2 cups chopped raw apple
1/2 cup pecans
1/4 tsp. salt
Cream sugar and margarine, add egg.
Mix in remaining ingredients.
Pour into a greased 6 x 10-inch Pyrex dish.
Bake at 350 degrees for 40 minutes.
Serve with ice cream or whipped cream.
Summer Quiche
Single crust pie shell
Brush crust with Dijon or other spicy mustard…
Bake 5 to 7 minutes at 375 degrees, set aside.
Prepare:
4 cups combination of yellow squash or zucchini, sliced
3/4 cup red pepper
1 onion, sliced
Some broccoli, if you’d like
1 clove of garlic
Sauté vegetables quickly in olive oil.
The vegetables should still be crisp.
Add:
2 Tbsp. Parsley
2 Tbsp. Basil
(you can use any herbs… except rosemary)
1/4 tsp. salt
Pepper
In a large bowl mix
2 eggs, beaten, with
1/4 cup milk
2 cups of grated cheese mixed coated with 2 Tbsp flour.
Some ham, if you’d like
Add squash mixture, and stir to combine.
Pour mixture into pie shell and bake at 350 degrees for 25 minutes or until a knife comes out clean.
