I was so surprised to get a call from Doug Lantz’s grandma, who is 96 years young, asking me to send her a recipe for pumpkin pie. She said she has never been able to make a good one. After a conversation with her, I offered to make a pie to see if she liked it. She said, “No, I want to learn to make one myself.”
So, Grandmother Collins, here is one I make. I hope you like it.
Pumpkin Pie
2/3 cup sugar
2 Tbsp. flour
½ tsp. salt
½ tsp. nutmeg
½ tsp. cloves
½ tsp ginger
1 tsp. cinnamon
2 cups cooked pumpkin
2 eggs, beaten
1 cup milk
1 Tbsp. butter, melted
Preheat oven to 350 degrees.
Mix together sugar, flour, salt and spices and set aside.
Mix cooked pumpkin, beaten eggs, milk and melted butter in a large bowl. Add dry ingredients and mix well.
Bake at 350 degrees in an uncooked pie shell for 35 to 45 minutes or until firm.
Sometimes I warm my filling before I put it in the crust.
