Ramps Gratin
2 Tbsp. butter, divided
½ cup Swiss cheese
Salt and pepper to taste
½ cup dry bread crumbs
¾ lb. ramps, washed and sliced
2/3 cup heavy cream
In a skillet, melt 1 Tbsp. butter.
Add bread crumbs to toast. Stir occasionally until golden.
Cool.
Toss with cheese and set aside.
Melt remaining butter in skillet.
Add ramps and cook until limp.
Add cream and cook 1 minute longer.
Transfer to a greased small baking dish.
Sprinkle with bread crumbs.
Bake at 350º for 15 minutes or until hot and crumbs are lightly brown.
Ramp Casserole
1 lb. sausage, fried and drained
2 cups Longhorn cheese
2 cups milk
2 eggs, beaten with the milk
2 or more sliced potatoes
2 pints ramps
Spray casserole dish.
Layer sausage, potatoes and ramps in dish.
Pour in milk and egg mixture, and top with cheese.
Bake at 350º for 45 to 60 minutes or until ramps and potatoes are done.
